Avocado Feta Dip

Last Saturday afternoon, I was sitting on the couch and drinking coffee while flipping through Instagram stories. My friend Paige’s story pops up, and I find my self staring (and drooling) over a photo of her Avocado Feta dip. Like most people, I’m obsessed with avocado. And Cheese. Two things ALWAYS on our grocery list, and two things our fridge is NEVER without. Just so happens that I had just RSVP’d very last minute to a cook book party and had nothing to bring, and zero time to decide on or cook an intricate dish. So naturally I text Paige and beg her for her recipe. Paige is an unreal cook…My husband and I always look forward to dinners at her and her boyfriend’s house, casual or otherwise, because we know we are about to be served an amazing, and unique home cooked dinner. So, I knew that this would be delicious and a crowd pleaser. Bonus, I had the ingredients at home already. Double Bonus, it only took about 5 minutes to whip up…. so I was only about 10 minutes late for cook book club. Not too bad for me, really!!
I have made this dip three times in less than one week. Its perfect for eating with chips and salsa (another house staple), or with quesadillas or fajitas. It would also be an amazing burger topping!! Since this recipe came from Paige’s brilliant head, and she did the whole “a little bit of this, a handful of that” thing, I attempted to quantify the ingredient amounts for you, but it is a very forgiving recipe and can easily be adjusted to your personal preferences.
Ingredients
- Two or three large avocados
- 1/2 cup feta cheese
- 3/4 cup loosely packed cilantro
- Juice of one wedge of lemon
- 1 Tbs avocado oil
- chilli flakes
- salt
- pepper
- garlic powder
Method
- Half avocados, and remove pit. Combine avocados, feta cheese, cilantro, and lemon juice in a food processor or blender, and blend until smooth.
- If your mixture is too thick, add avocado oil bit by bit until reaching desired consistency.
- Season with chilli flakes, salt, pepper, and garlic powder to taste.
- Transfer to serving bowl, and garnish with more feta cheese, if desired. ENJOY!
Tip: I Probably don’t need to remind you, but avocados turn brown fast! The lemon in the recipe helps to slow that process a little bit, bit if you’re not planning to serve this dip immediately, transfer to airtight container and store in the fridge. Reserving the pits and adding them whole to the dip helps to mitigate browning as well!
