BC Cherries are HERE! Can you believe it?! As a kid, I remember excitedly awaiting for the arrival of these fresh + juicy treats! Luckily for us, they are available right now at your local Freson Bros.! Start the Car!!!!
In my opinion, BC Cherries are the perfect summer fruit- easy for enjoying on their own or in a crisp and fun Summer salad, like this Cherry Caprese salad!
This unique twist on a gourmet classic is both delicious and easy! No summer salad is as cravable as this one– made with succulent, ripe cherries, creamy fresh mozzarella, basil, rocket greens, and an addictive balsamic drizzle.
It’s basically all of the best flavours of summer, layered on a platter to enjoy! The sweetness of the BC Cherries balances out the spicy arugula, and the fresh Alberta Mozzarella (made in-house!) at all Freson Bros. locations rounds this dish off the Cherry Caprese Salad perfectly!
To me, there is nothing better than Freson’s fresh, local produce, and this lovely summer salad is no exception! It comes together in just a few minutes, and is the ideal accompaniment to any weeknight meal, or a fantastic addition to your next picnic or cookout!
Cherry Caprese Salad Recipe
Here’s What you Need:
- 1 cup BC Cherries (halved and pitted)
- 6 Cups Arugula
- 1/2 cup Fresh Basil, roughly chopped
- 1 cup Kale, chopped
- 200g Alberta Mozzarella (diced)
- Balsamic Glaze 1/3 cup (to taste)
- 1/4 cup Olive Oil
- Salt + Pepper to taste
Method:
1. Wash and chop Cherries, Kale and Basil
2. In a large Salad bowl, combine Arugula, Basil, Kale, Cherries and Mozzarella
3. Drizzle Olive Oil and a generous amount Balsamic Glaze over Greens.
4. Toss to combine.
5. Season with Salt + Pepper.
6. ENJOY!
